A place where the table is an organic concept, the centre of a complex system that harmonizes the excellence of the Langhe territory: from the land to raw materials, from the raw materials to the know-how of producers, from the producers to the chef’s genius, from the chef to the search for balance between taste and the aesthetics of the dish.

The raw materials we use come exclusively from small local suppliers. The dishes served at Ristorante FRE arise from curiosity and the search for ingredients that are close at hand – the fruit of local labour – and which the restaurant has personally known and tasted…
NO-WASTE POLICY, THE ORGANIC GARDEN AND ORCHARD, WILD FOOD
The FRE kitchen is managed by Paolo Meneguz and is inspired by the concepts of sustainability, territoriality and the fight against waste. Even less noble parts of slaughtered animals, which are bought whole, are used to prepare dishes especially designed according to the cut. The proximity of raw materials is guaranteed by our vegetable garden and orchard, where greens, ancient varieties of fruit and aromatic herbs are grown. Foraging – the search for spontaneous wild products such as mushrooms, small fruits, herbs, flowers, berries and edible plants, game and river fish – complete a marvellously territorial menu.
